Kevin’s not taking credit for this concoction – he discovered it while hanging at Dallas’ Star Café. However, this sweet ride is making his wheels turn, and he promises that version 2.0 is coming soon (we can’t believe there is room for improvement, but, okay, we’ll bite).

Lighter Elotes (Dip): It’s like putting your whole mouth in the dip.
Guess where Kevin thinks the best Mexican food is created and served? Save ya time: it’s not Mexico. If your answer is Texas, cross the border — you’re first in line for the Elotes dip, and if you double dip, we won’t confront you.
Elotes – in its original form – is a popular Mexican street food: corn on the cob with butter, mayo, chili and lime. We’re going to stop you right here from booking a ticket to Texas: this cob is heavenly high in calories and fat. So we left it to Kevin to do his thing; the result: an equally awesome treat with way fewer calories. Amen? It works with the grill or the oven (grab that grill, though). Flourless Spiced Black Bean Brownies: Yep, you read that right, brownies.
Go ahead and have a brownie – and it’s not even a cheat day. That’s because Kevin faced down evil and triumphed: his chocolaty brownies contain black beans (a superfood!) and no flour. What that means for you (beside you thanking us forever): satisfying that dark, wicked sweet tooth, but remaining clean, honorable, awesome and true. Note: Kevin warns us that you can use raw honey or raw sugar instead of what he recommends (stevia cruda, which will help reduce the overall sugar in the recipe), but that will alter the makeup of the macronutrients. Just sayin’. No judgment.
Make sure you have a high-powered blender on hand (you know you always wanted one anyway). How you know it’s done in the oven: you can pierce it with a toothpick, and the toothpick comes up clean.
